It's July, and in Kentucky, the air feels thick. I don't know about you, but the last thing I want on a hot July evening is a heavy meal or a hot kitchen. Sometimes, less is more. A simple plate of grilled salmon with a crisp salad of greens and tomatoes is light, fresh, and satisfying—perfect for steamy evenings on the porch.
Keep the Heat on the Grill, Not in the Kitchen
Grilled salmon is one of my personal favorites for muggy weather because it cooks quickly and stays tender without feeling heavy. As a health benefit, it also adds a big boost of protein and healthy fats. Simply brush fillets with olive oil, sprinkle with salt, pepper, and a squeeze of lemon, then grill for just a few minutes per side. I like to place lemon slices on the fish for the last few minutes to warm the lemon and release more citrus goodness.
