Thinning Out Herbs Today: Making the Most of Basil and Sage

If your herb pots are looking crowded, today is the perfect day to thin them. With basil and sage, a few careful snips can boost plant health—and give you fresh flavor for dinner tonight.

Thinning Basil + Quick Basil Oil Drizzle

For basil, pinch off weaker seedlings at the soil level, leaving the strongest 6–8 centimeters apart. Use the tender tops in a fast basil oil: blend 1 small handful basil thinnings, 3 tablespoons olive oil, a pinch of salt, and a squeeze of lemon. Spoon over tomatoes, grilled chicken, or crusty bread.

Thinning Sage + Crispy Sage Butter Pasta

Sage prefers space and airflow. Snip extra seedlings so the remaining plants stand about 15 centimeters apart. Rinse the small leaves and pat dry. For a flavorful dinner, melt 3 tablespoons of butter in a pan, add a small handful of sage leaves, and cook until crisp and fragrant. Toss with hot pasta, a little cooking water, salt, and grated Parmesan.
